Avocado Toast 5 Ways

I’m the first to admit that I’m a creature of habit. Habits are easy and comforting, and in this case, delicious. For the past couple of years, when I’m at home, I tend to eat the same thing for breakfast every day: avocado toast. It’s to the point where, if I don’t have any ripe avocados, I’m likely to just skip breakfast. Possibly one of the reasons I liked Australia so much was that avocado toast was on the breakfast menu at a lot of cafes and restaurants. I felt right at home.

I think it’s a pretty healthy way to start the day, and nutritionists seem to agree. Back when I first became a vegetarian, I ate way more cereal than vegetables, and I like to think that I’m making up for it with vegetables for breakfast. My fallback additions are feta cheese and spinach, and sometimes I mix it up depending on the other produce I’ve got in my fridge.  But I decided to get more creative for a spell, and try some new toppings on my avocado toast. Here are five of my experiments.

Most of these aren’t so much of recipes, as guidelines. For all of them, toast your bread, slice your avocado, and put it on your toast. You can leave it whole, or mash it up a bit, depending on what you prefer.

Radish and Feta Avocado Toast

Radish & Feta

Slice up a radish, and place the slices on top of the avocado. Sprinkle with crumbled feta cheese.

Seaweed, Cucumber, and Sesame Seed Avocado Toast

Seaweed, Cucumber, & Sesame Seeds

Use a vegetable peeler to partially peel the skin from a cucumber, then peel additional pieces of the cucumber and place them on the avocado. Sprinkle with torn pieces of dried seaweed (I used nori sheets meant for sushi), toasted seseame seeds, and sea salt.

Greek Yogurt, Pistachios, and Dukkah

If you’re not familiar with dukkah, it’s a Middle Eastern spice blend that can be made a lot of different ways. I used this recipe, but this one is simpler. (The internet says Trader Joes also sells a pre-made version.)

Spread Greek yogurt over your avocado, then sprinkle the dukkah on top, followed by whole pistachios.

Tomato Jam

Top your avocado with a smear of homemade tomato jam. (Even though tomatoes are out of season, I’ve been making it with cartons of grape tomatoes, and it’s still good!)

Brussels Sprouts & Tahini

Thinly slice a raw Brussels sprout and place it on top of your avocado. Add dollops of tahini and sea salt.
