Strawberry and Granola Yogurt Parfait Popsicles

Although summer doesn’t officially begin until June 21, we’ve already got triple digit temperatures in the forecast for this weekend. So as far as I’m concerned, summer is here. Which means that it’s iced coffee and popsicle season. And why not start with both first thing in the morning? These strawberry granola yogurt popsicles are practically the same as a breakfast parfait, just way colder.
Yogurt, fruit, and granola make these popsicles an excellent excuse to have a frozen treat for breakfast.

I made these with my homemade granola, but there’s no reason you can’t make them with your favorite store-bought granola. You can also substitute other fruits, fresh or frozen, for the strawberries.

Strawberry and Granola Yogurt Popsicles

Makes 6 popsicles

12 oz fresh or frozen strawberries, roughly chopped
1/4 cup sugar
1 cup Greek yogurt
1/3 cup buttermilk, or regular milk
2 to 3 tablespoons honey
1 cup granola

Combine the strawberries and sugar in a small saucepan and stir gently to combine. If using fresh berries, let the berries sit on the counter for at least 10 minutes, until the strawberries have released their juices and the sugar is dissolved and syrupy. If using frozen berries, thaw over low heat until berries are soft and sugar is dissolved.

Place the pan over medium heat and bring to a rapid simmer. Turn the heat down to low, and cook for 8 to 10 minutes, stirring often, until the strawberries are thick and jammy. Remove from heat and let cool to room temperature. You should have about 1 cup of jammy fruit.

When ready to assemble the popsicles, whisk together the yogurt, the buttermilk, and 2 tablespoons of honey. The yogurt should be thick, but pourable (roughly the consistency of regular yogurt). Taste and add more honey if desired. Stir the granola into the yogurt mixture.

Arrange 6 popsicle molds (1/2 cup capacity) on your work surface. Transfer a generous spoonful of yogurt granola into the bottom of each mold. Then add a spoonful or two of strawberries. After each layer, gently tap/shake the molds to work out any air bubbles between the layers. Continue layering yogurt, granola, and strawberries until the molds are filled.

Insert popsicle sticks into each mold and place the popsicles in the freezer. Freeze until solid, at least 6 hours.
