As it has started to feel like real summer, I’ve been craving watermelon. So I bought one the other day. But you know how on those tables for changing babies in public restrooms, they have warnings not to leave your baby unattended? Watermelons should come with those. I was preparing to cut mine up, and I set it on the counter and turned my back for a second to grab something. Just a second!
You know where this is going, right?
The next thing I knew, there was a loud THUD, and I looked over to see this:
For some reason this was super funny to me. But it actually split pretty perfectly, and I cut it up and have been enjoying it anyway. Which means that I have a large bowl of watermelon chunks in my fridge. I also happened to pick several sprigs of mint from my yard (it’s starting to take over the garden!), and it occurred to me to combine them. In a drink, of course.
Watermelon Mojito
1 watermelon slice
1 lime
2 sprigs mint
2 oz. white rum
4 oz seltzer water
Cut the watermelon into chunks and add to a glass with the juice of 1 lime, sugar, and mint leaves from 1 sprig. Muddle. Add 2 ounces white rum and ice. Top with a handful of ice and seltzer water; garnish with a mint sprig and watermelon chunk.
(I use a SodaStream to make instant soda/seltzer water on demand, and I love it! Also, that House Spirits rum is locally made, and pretty damn delicious.)
