Strawberry Buttermilk Popsicles

Last week I mentioned that I was looking forward to drinking iced coffee and eating frozen treats, and since strawberries are in season, I used some to whip up a batch of these popsicles. Bursting with fresh berries (some from my garden!), these taste like summer. And don’t be scared off by the buttermilk–if you don’t have some sitting around in the back of your fridge, like I did, you can always substitute yogurt, watered-down with some milk.

Strawberry Buttermilk Popsicles

1 1/2 cups strawberries, washed and de-stemmed
1 cup buttermilk
1/2 cup sugar
2 Tbsp lemon juice

Put everything in a blender and puree for a few seconds until everything is mixed, but there are still small bits of strawberry. Pour into your molds and freeze.

Makes about 4 large pops.
