Happy Friday! According to my calculations, that means it’s time for a cocktail or two. I found this one here, where it’s scaled for a big batch, and I cut it down so it works for a party of one. I also wasn’t fond of the name, so I gave it a new one. That’s totally allowed, right? This is my blog, so let’s say yes. (Clearly I’ve been drinking too many of these and become belligerent.)
Honey Mint Lemondrop Cocktail
1 Tbsp honey
1 Tbsp hot water
2 oz vodka
8-10 mint leaves mint or lemon balm (or a mix)
Juice from 1/2 lemon (about 1 Tbsp)
Add honey and hot water to a glass, and stir until the honey is dissolved. Add mint or lemon balm leaves and muddle. Add vodka and a generous handful of ice cubes, and 1/4 cup cold water. Stir, allow to chill for a minute or two, and serve.
