So far I’ve made blackberry ginger bars, sangria, and now these blackberry mojitos, and I’ve still got tons of blackberries to spare. I’m checking out a bunch of these recipes and trying to figure out what to make next, but in the meantime, I’ll be sipping on one of these refreshing cocktails.
Blackberry Mojito Cocktail

Makes 1
12 blackberries
12 large mint leaves
1 teaspoon sugar
2 tablespoons fresh lime juice
1/2 cups seltzer water
1/4 cups vodka or rum
6 to 8 ice cubes
Mint sprig (optional)
Lime slices (optional)
Muddle blackberries, mint leaves, sugar, and lime juice in a tall glass until berries are mostly crushed. Add vodka or rum and seltzer, and stir to combine. Top with ice cubes and garnish with a mint sprig and lime slice.
