Popcorn is one of my favorite snacks, and not just at movies. Maybe it runs in the family, because we used to call one of my grandfathers “Grandpa Popcorn,” due to his addiction to the stuff. His version was drenched in butter and salt, whereas I prefer to air pop it, give it a quick spray with aerosol oil, and sprinkle just a bit of salt on top. It’s perfect for a little bit of guilt-free, mindless munching. But I decided to try making a much more decadent version with coconut and chocolate. While you might not want to eat a whole tub of this stuff, it makes a great treat in small batches.
Chocolate Coconut Popcorn
3 cups popcorn, popped
1 Tbsp chocolate chips
1 Tbsp unsweetened shredded coconut (or chips)
2 tsp unrefined coconut oil
pinch fine salt
Either by hand or in an electric spice/coffee grinder, finely chop the coconut. In a heat-proof measuring cup or bowl, melt the chocolate chips and coconut oil by microwaving for 30 second increments. Stir, and drizzle half over the popcorn, then sprinkle with the salt and half of the coconut. Toss the popcorn, then drizzle the rest of the chocolate and coconut oil over it, followed by the remainder of the coconut.
(Make sure to grab a napkin–this stuff is a bit messy unless you wait for the chocolate to solidify, and who wants to do that?)
