This is my first vegan Thanksgiving, and I’ve been trying to figure out what to make. Whether you’re hosting Thanksgiving, or just bringing a dish to an event, it can be tricky to figure out what to make for traditionally meat-centric holiday meals when you’re serving people with restricted diets. The ideal dish is something seasonal that’s also festive and special. Here are some of the options I’ve come up with. These are all main dishes and sides, so I may have to do another round-up of dessert options, because vegans need dessert, too. 🙂
Row 1: Vegetables wellington | Vegan green bean casserole
Row 2: Roasted brussels sprouts with cranberries and balsamic reduction | Lentil and sweet potato shepherd’s pie
Row 3: Stuffed butternut squash with tempeh | Kale, brussels sprouts, and tofu salad
Row 1: Thyme and white bean pot pies | Baked cauliflower with spicy lentils
Row 2: Puff pastry wrapped lentil loaf | Thanksgiving slaw
Row 3: Cornbread stuffing | Vegan truffled wild mushroom pâté
After staring at pictures of all of this delicious food, now I’m hungry, and can’t wait for Thanksgiving! How about you, are you looking forward to it?
