This is another twist on the classic mojito, this time with nectarines and blackberries. I’ve still got tons of blackberries to use up, but I bet this would also be good with blueberries or raspberries. In the course of making this, though, I discovered that soaking nectarines in rum is a really excellent idea. You do have to plan ahead a bit, but it’s totally worth it.
Nectarine Blackberry Cocktail Recipe
Makes one drink.
3 oz light rum
1/2 nectarine, cut into small chunks
1 Tbsp sugar
12 blackberries
12 large mint leaves
1 teaspoon sugar
2 tablespoons fresh lime juice
1/2 cups seltzer water
6 to 8 ice cubes
Mint sprig (optional)
Lime slices (optional)
A day or two before you plan to make these, cut up a nectarine, place it in a small lidded jar, and cover it with the rum. Place in the refrigerator to soak, shaking up the jar occasionally.
To prepare the drink, muddle blackberries, mint leaves, sugar, and lime juice in a tall glass until berries are mostly crushed. Add rum, nectarine chunks, and seltzer, and stir to combine. Top with ice cubes and garnish with a mint sprig and lime slice.
